Amy's Asparagus Soup
1 C asparagus stems
1 C beet stems
1/2 C kale stems
1 small carrot
1 small yam
1 small onion
6 cloves garlic
1 C red lentils

4 T coconut oil
1 t herbs de provence
1 t curry
******
chop roots and stems
saute' / add herbs / stir
rinse and add lentils
add curry/stir till fragrant
add water/simmer 32 mins

cool for 15 mins
puree' with
immersion blender

salt pepper
salt pepper
top with roasted pumpkin seeds
