Coconut Lentil Soup
1 C lentils
1C red cabbage
1/2 large carrot
1/2 bulb fennel
some stalk and leaves
1/2 small onion
5 cloves garlic
******
1 T curry
1/2 t herbes de provence
saltandpepper
1 Can coconut mi*k
1qt veg broth
*******
dice the cabbage and roots
saute' in olive oil
in a large soup pot
rinse and add lentils
add curry and stir till fragrant
add qt of water
bring to simmer
add salt and pepper
add qt veg broth
simmer 40 mins
add coconut mi*k
simmer 10 mins
