Cold Soup For A Hot Day

Cold and Crunchy Blueberry Soup

3 T Blueberries
6 t Raw Coconut Butter
2 t Goji Berries
2 t Raw Cacao Nibs
1 T Chia Seeds
1 C Rice/Hemp/or Nut Mlk
1 T Agave or Honey
pour mlk into a pint jar
add the chia seeds
apply the lid tightly
shake vigorously
add the nibs/goji
add 6 t raw coconut butter
apply the lid tightly
shake vigorously
add agave or honey
add the blueberries
shake gently

eat directly from jar
with a long handled teaspoon

Red Lentil and Burdock Soup
Suggestions
makes enough for four
3 qt soup pot
2 qts water
lentils will expand
simmer slowly
options and opportunities
use a good mineral rich salt on each bowl
fresh ground pepper
Optional Greens
mustard/ collard/ dandelion
spicy/ smooth/ bitter
Optional Roots
dehydrated: daikon/burdock/ginger
carrots

Red Lentil and Burdock Soup

  • Ingredients
  • 1/2 C daikon julienned
  • 1/2 C burdock thinly sliced half rounds
  • 1/4 C ginger thinly sliced
  • 1/4 C garlic minced
  • 1/2 C yam chopped
  • 1/2 C parsnip julienned
  • 1/2 C turnip julienned
  • 1 C red lentils
  • 1/2 C chopped greens /daikon or turnip
  • 1 T herbes de provence
  • 1 T curry
  • 1 T olive oil
  • saute roots and herbes de provence 3 or 4 mins
  • rinse the lentils well / add
  • add the curry / stir until fragrant
  • add the greens/stir
  • add water
  • bring to a simmer
  • turn to low / cover
  • simmer 20 mins / stir 2 or 3 times

Why 32 mins?

Why 32 mins/32 mins will be an average time for makeing my soups // some will be shorter // some longer // my cold breakfast soup takes only 6 mins // my pinto bean soup takes overnight soaking// 15 mins prep and 2 hrs to cook and well worth it. My soups will be{dairy free} using arthritis friendly super foods that are easy to find at your local co-op// Whole Foods Mkt/and on line and if your lucky enuff to have a garden you can grow your own//if you live in minnesota you can find burdock growing wild/ i will be starting with my 32 min daikon and red lentil soup featuring daikon/burdock /garlic and ginger// my soups are designed for the soup pot and they will work very well with a crock pot//i will be looking foreward to hearing your comments// hopeing you find this in good health // love and light // gary
