Roasted Roots with Fennel Pollen

1 large yam peeled and quartered
save the peelings
2 large beets peeled and quartered
save the peelings
3 med carrots peeled and halved
save the peelings
1 fennel bulb halved
save the outer leaves 
1 large onion quartered
1 med daikon halved
save the trimmings
3 cloves garlic
save the trimmings
8 button mushrooms

simmer the peels and trimmings
in a pint of water for 32 mins

place the veg's in a large pot
or baking dish with the beets
and carrots on top

pour the water from the trimmings
over the veg's
heet 2 T co-co nut oil
and spoon onto veg's
dust with 1 t fennel pollen
Bake covered at 400*for 1 hr

mint and pistachio pesto

Mint and Pistachio Pesto
1 cup fresh mint packed
1/2 cup lightly salted and roasted 
pistachios/shelled
1/4 C Daiya cheddar cheese

1/2 cup olive oil
3 cloves garlic
blend till smooth
refridgerate

mixed greens and avocado salad

Mixed Greens 
and Avocato

2 handfulls 
baby mixed greens
1 handfull baby arugula
1 handful baby spinach
1/2 carrot diced
1/4 C sunflower seeds
1/4 C pumpkin seeds
toasted
1/4 C Daiya cheddar cheese
1 med avocato diced
1 hard boiled egg sliced

1 T olive oil
1 T apple cider vinegar
2 T Follow Your Heart
vegenaise 
toss and enjoy
