mint and pistachio pesto

Mint and Pistachio Pesto
1 cup fresh mint packed
1/2 cup lightly salted and roasted 
pistachios/shelled
1/4 C Daiya cheddar cheese

1/2 cup olive oil
3 cloves garlic
blend till smooth
refridgerate
