Red Lentils and Asparagus

Red Lentils and Asparagus
*********
1 cup red lentils
1 cup asparagus chopped
1/2 cup yam cubed 
1/2 cup burdock half moons
1/2 cup onion sliced
1/2 inch ginger minced
4 cloves garlic diced
3 T olive oil
1 T curry
1 T daikon leaves minced
1 T herbes de provence
*********
saute`roots in olive oil
add herbes de provence
stir till fragrant
rinse and add lentils
add curry stir till fragrant
add water bring to simmer
add daikon leaves
cover and simmer for 15 mins
add asparagus simmer 5 mins
remove from heat

Burdock and Chickpeas

Burdock and Chickpeas
Ingredients
1 C dry chickpeas
2 inch piece  burdock
2 inch piece ginger
4 cloves garlic
3 T olive oil
1 T dehydrated daikon greens
fresh lemon juice
toasted buckwheat groats

spices
2 t coriander
1/2 t cumin
sea salt 
fresh ground pepper

4 qt soup pot
soak chickpeas overnight
rinse and
add to soup pot
add 3 qts water
simmer 45 mins
save peas and water
wash and dry pot
puree`peas and some of the
water till smooth 
add water to desired 
consistency
it will reduce as you simmer

mince roots 
add olive oil to pot
heat till it shimmers
add roots and saute`
add spices stir till fragrant
turn the heat to low then
add peas and simmer 5 mins
add daikon leaves simmer 5 mins
remove from heat 
add 1 T lemon juice
ladle into bowls 
salt and pepper to taste


top with buckwheat groats

Raw Santa Barbara Pistachio
Soup

1/2 small apple diced 
3 T raw Santa Barbara pistachios 
3 T roasted and ground
sesame seeds
1 Cup hemp m*lk

combine apple and pistachios
in a pint jar
heat m*lk till it's 
warm and good
pour over apples and
Santa Barbara pistachios
add ground sesame seeds
shake or stir
eat directly from jar 
or pour into small bowl

Blueberry Almond 
3 T blueberries 
2 T almonds crushed
1 Cup quinoa cooked
1 Cup hemp m*lk
1/2 teaspoon lucuma
1/2 teaspoon mesquite
combine hemp m*lk lucuma
and mesquite heat gently
combine with quinoa
pour over almonds
top with blueberries
yum yum

Spring Garlic and Yam with noodles

Spring Garlic and Yam

ingredients 
small yam cubed
small bunch spring garlic
with tops
small onion sliced thin half moons 
small parsnip julliened 
small piece of ginger sliced matchsticks
small piece of burdock thin half moons
two stalks of celery sliced half moons
handfull of mung bean noodles

Herbsandspices
T dehydrated daikon root matchsticks
T dehydrated daikon greens
T dehydrated turnip matchsticks
T herbes de provence
2 T olive oil
t curry
1/4 t celery seeds

clean and chop garlic save the tops
saute` garlic and the rest of the roots and celery in olive oil/add herbes de provence/stir
add curry/stir till fragrant /add water and bring to simmer /add some garlic tops
add daikon leaf
and celery seed/simmer 25 mins
add noodles/remove from heat
stir gently/cover/5 mins

Parsnip and Nettle puree'

Parsnip and Nettles
2 C parsnips chopped
1 C nettles blanched
1 C leeks chopped
1 C kale chopped
1/2 C fresh daikon chopped
1/2 C fresh burdock chopped
2 T fresh ginger chopped
3 cloves garlic smashed and peeled
3 T olive oil
1 T herbes de provence
1 T  curry
3 T fresh lemon juice
dash of bitters
*******
wear gloves
blanch nettles/strip and chop
simmer olive oil till it shimmers
add roots kale and nettles/stir
add herbes de provence/stir
add curry/ stir till fragrant
add 2 1/2 quarts water
bring to simmer/20 mins
remove from heat/5 mins
add lemon and bitters
puree' with immersion blender
adjust water and seasonings
