basil and asparagus pesto

Basil and Asparagus pesto

1 C basil chopped and packed
1 C asparagus chopped
1/4 C pistachios roasted
1/4 C Daiya cheddar cheese
4 cloves garlic 
1/2 C olive oil
dash of sea salt
blend till smooth

1/2 bunch curly kale chopped
2 med carrots thin 1/2 rounds
2 persian cucumbers diced
1 sm yellow beet diced
1 sm red onion thinly sliced
1/2 C Daiya cheddar cheese
1/4 C pumpkin seeds roasted
1  4 min soft-boiled egg chopped

1/4 t herbs de provence
1 T olive oil
1 T apple cider vinegar
1 large T vegenaise 
S&P
toss and enjoy

fennel and asparagus

Asparagus and Fennel
with
salmon soup
^^^^^^
1 med fennel bulb chopped
1 med bunch asparagus chopped
1 small burdock root chopped
4 cloves garlic sliced
1 med onion sliced
1 med carrot half rounds 
1/2 C lentils
1/2 C quinoa
1 can 365 lite coconut milk
1/2 can 365 salmon
1 t herbs de provence
1 t curry
1 T coconut oil

saute' veg's in coconut oil
add herbs and curry
stir till fragrant 
add water and lentils
simmer covered for 30 mins
add quinoa and salmon
simmer covered 20 mins
remove from heat and enjoy
